Lamb leg baked in the oven

Hi friends! Another lamb recipe. Very simple, but at the same time the meat is soft and juicy. And no bad smell.

Ingredients

  • Leg of a young lamb – 1 piece (2.5 kg)
  • Garlic – 4 cloves
  • Salt – 2 tablespoons
  • Paprika – 2 tablespoons
  • Rosemary – 2 sprigs
  • Mineral carbonated water – 100 ml

We remove excess fat and films from the leg of lamb. We also cut off the shank, it will go to another dish. And most importantly (if your butcher didn’t it): in the area of knee, on the inside between the two muscles, find a lump of fat and remove it – there is a lymph node, which gives the lamb a nasty smell.

We make small and shallow cuts, most importantly, if there is a film on the ham, then you need to cut it so that the spices get inside.

Put the leg in a deep dish.

Crush the garlic, and mix it with all the spices (salt, paprika … you can add ground pepper).

We rub the leg well on all sides.

Let rest for 20 minutes and then pour mineral water.

Cover with cling film and put in the fridge for two hours.

After 2 hours we take it out, let it stand in the heat for 30 minutes.

And we wrap it first in baking paper (add a couple of sprigs of rosemary here), and then in a layer of foil.

Preheat the oven to 200° and put our dish for 15 minutes.

After 15 minutes, reduce the temperature to 160° and cook for 1 hour 40 minutes.

In principle, it will already be ready, but if you want to get a beautiful crust, then open the foil and paper, switch the oven to the grill mode (at 200°) and cook the leg for another 10 minutes, no more.
