Homemade beef burger

Homemade burger recipe. This is a basic recipe – learn how to make it, and then you can already vary the ingredients, come up with sauces for it. You can even develop your own signature sauces and surprise family and friends. So let’s go.

Ingredients

For cutlets:

  • Beef meat – 1.5 kg
  • Egg – 2 pcs
  • Ground black pepper – 1 teaspoon
  • Salt – 2 teaspoons
  • Oregano – 1 teaspoon

In addition, we will need:

  • 10 burger buns
  • 2 large tomatoes
  • 10 lettuce leaves
  • 2 pickled cucumbers
  • Mayonnaise
  • Ketchup
  • Cheese for burgers

Process:

We twist the meat in a meat grinder, add everything from the list for the cutlet (eggs, salt, oregano and black pepper). Mix thoroughly and do not forget to wet your hands in warm boiled water. What is water for? It performs two functions: it prevents the minced meat from sticking to the hands and at the same time the minced meat becomes juicier.

And we make cutlets. From 1.5 kg of minced meat, 10 cutlets are obtained. They stuck it on, sprinkled it with a little flour and let it lie down for now.

While the meat is resting, prepare our vegetables.

Cucumbers cut very finely.

Cut the tomatoes into slices and so that exactly 10 pieces are obtained.

Tear the lettuce leaves to fit the size of the bun, you can even a little more. When the vegetables are finished, we start frying the cutlets. To prepare this recipe, we took a regular frying pan, not a grill.

Cutlets turn out a little more than a bun, but it’s not scary – they will decrease when frying.

Pour quite a bit of sunflower oil and fry the cutlet on the first side – 2 minutes, turn over and fry on the other side for 10 minutes. This frying technique is called “sealing the meat”. So that there is a crust on the outside, and the minced meat remains juicy inside. Turn over again, fry for 6 minutes, then without removing the cutlet from the pan, put a square of cheese for burgers on it. And fry for 2 more minutes. The cheese usually melts in a couple of minutes.

In a pan with a diameter of 26 cm, it is advisable to fry no more than 2 cutlets at once.
The reason is simple: when frying, minced meat releases juice in any case, and when there are a lot of cutlets in a pan, they are no longer fried, but boiled. And all the juice goes away, the cutlets are dry.

Now that all the vegetables are prepared and the cutlets are fried, we begin to assemble the burger. But, first, we will prepare the buns themselves. In an oven preheated to 200 degrees C (top-bottom mode with convection), place the buns cut in half for 2-3 minutes. The degree of readiness of the buns can be checked with your hand, touch the soft side of the bun – if the surface is a little dry, then take the buns out of the oven. And while the buns are warm, we begin to assemble the burger.

The order of the layers of the burger:

  • Bottom of the bun
  • A teaspoon of mayonnaise, spread on a bun
  • lettuce leaf
  • A slice of tomato (you can add a little salt to it)
  • Cutlet with cheese
  • Chopped Pickled Cucumber
  • Ketchup with mayonnaise – half a teaspoon each (or you can mix them in advance)
  • Top of the bun
